New Cape Clear whiskey distillery seeking shareholders

The first distillery to be built on an Irish island in modern times is nearing completion and those behind it have already trademarked the gin and whiskey it will produce. The distillery is being financed and built by islanders on Cape Clear in an effort to boost the local economy — but they are also inviting shareholders to come on board.

They dug into their own pockets after an investor pulled out due to a very lengthy, costly, difficult, but ultimately successful planning process. Efforts to get another investor failed and a decision were made to develop the project themselves. Cape Clear Co-op stepped into the gap along with a number of the 130-strong island population. Séamus Ó Drisceoil, who is a spokesman for the project, said they have been developing it on a step-by-step basis. “In doing so, we expect to keep development costs to a minimum by using local skills and investment, re-purposing buildings and materials where possible and finding every possible way to reduce cost and create value,”.

Dingle Distillery unveils fourth single malt

Ireland’s The Dingle Whiskey Distillery has unveiled its fourth single malt whiskey, which is limited to just 2,000 bottles in the UK. A marriage of bourbon, sherry and port casks, Batch No 4 Single Malt (46.5% ABV), is described as a “full-flavoured yet harmoniously balanced mix of creamy vanilla sweetness from the American oak casks, combined beautifully with dried fruit flavours of apricot and sultanas from the fortified wine casks”.

The latest single malt expression marks an “impressive increase in production”, following the third release, of which just 2,000 bottles were produced. Of the 30,000 bottles of Batch No 4 Single Malt produced, 2,000 bottles will be distributed to the UK. A further 500 bottles of a cask strength variant will be available exclusively in the UK and Ireland. Elliot Hughes, a partner at The Dingle Whiskey Distillery, said: “The unveiling of Batch No 4 is particularly exciting as it’s a whiskey married in our three main cask types; bourbon, sherry (Both Pedro Jimenez and Oloroso) as well as port.
